Fred Donnison, now retired having served over 30 years in the British Army, teamed up with local winemakers and oenologists, who shared his enthusiasm for fine wine and set up St George’s Winery, producing the “Land of Thermopylae”, a natural certified organically cultivated blend of Merlot and Syrah, adding recently Greek indigenous varieties.
Keeping within the ethos of the vineyard’s original owner he pledged to keep to the traditional way this wine is made with no added flavours or chemicals used. All the grapes are handpicked and transported immediately to the winery to be processed and then aged in oak barrels for the “Grand Reserve” (presold in private collections) 24 months and for the “Premium Reserve” 12 months.
